  1. So I found that it's best if you put the pork in on the second boil, after you cook the beans for an hour. Salt pork is cured so you can, though I don't recommend it, eat it without cooking it so a half hour in the oven will 'cook' a 1/2" slice of salt pork but if you're concerned ten minutes of boiling plus the baking will definitely cook it thoroughly.

    I wonder though…. If there was ever anyone in those times who couldn’t stand liquor/ beer… I have tried both and different kinds in my life… Twice, some years ago and recently and found I just have no taste for it… Kind of make me nauseous even thinking about either product…

  3. Beans have toxins. The point of the water is not for the beans to soak it up, the point is to have enough water to extract these toxins, then throw that water away and well rinse the beans. To be very sure, you put those rinsed beans into a new pot of water, bring to a boil, cook for 10 min. then strain them again, aka dump that water. Then and only then you put in the final water which remains until the end of cooking. Can't believe you people don't know this, you're literally poisoning yourselves.

  4. hey, good pork and beans is a banquet when you're drunk lol. Also, add the pork when the beans go in the oven, and cook them together at a low temperature for a long time covered. Uncover them for the last 30 minutes. Or if you're going to add the pork to the water, do so AFTER the first boil. Think about it, nobody in their right mind would dump all that pork flavor. So boil the beans, drain them, then add the pork, and more water, boil until the beans are soft, and then bake it all up. Don't EVER waste salt pork broth.

Similar to the the Mining towns of the American West, Logging camps in Northern Ontario and Backwoods Quebec would also serve "Le Porq et Beans" to the Rough, tough, backwoodsmen of the Interior of Canada's forest. cooked with think slabs of Canadian Back Bacon, and a thick surree of maple syrup beans, these hearty workers would eat up these meals with gusto and usually wash it down with a big tankard of Molson's or LaBatt's beer.

  7. 'Old Overholt' rye whiskey is closely linked to the 'Old West', particularly Tombstone, Arizona, and it is still served in tourist saloons in Tombstone. ‘Old Overholt’ rye whiskey, offered since 1810, was a favorite drink of Ulysses Grant and Doc Holliday.

  8. I suddenly had this flash when you put the plate to the side, of the Roseanne intro's.
    I would actually really like to see you sort of recreate that as the ending when you prepare dishes that you finish with multiple people.
    During the 'thank you patreon patrons' in the corner or to the side. A little bit of peparing the table and, (not going around with everyones face in view unless the all want to be :P), but maybe just seeing the hands reach across the table and pass eachother stuff.

    Or a similar idea but with preparing the plates, handing that and eating at the couch, or in what ever whay you have dinner. I usually eatr at my desk

    I don't know why I liked that mental image, but I do!

  10. Pro tip: if you're pissed enough at someone, serving their roommate or whoever they live with a combination of pork, beans, eggs and cabbage, is a perfectly leagal way to get revenge.
