This pineapple sriracha salsa is vibrant, refreshing, bursting with all kinds of flavor, and yet is very fast and easy to make. The most difficult part of this recipe will be deciding what to serve it on – it’s equally good on tacos and pulled pork, and—believe it or not—it’s also superb on ice cream. Enjoy!

  1. If there was one chef on the internet i would trust to prunounciate Sriracha correctly, it would be Chef John, on the other hand; if there was one chef i could count on trolling me by intentionally prunounciating Sriracha incorrectly, it would also be Chef John. Schrödinger's Sriracha.

  2. Chef, on the subject of a roasted beet salsa, it's very good to do a variation of a classic horseradish beet relish where you temper the heat of the horseradish by charring the horseradish as well as the beet before mixing up your sauce. I like to spike mine with a little tamarind to bring a little bit of sour to the sauce.

  3. This salsa is too easy to make. omg I could eat this every day. I’d put it in an omelette or on a chicken salad sandwich!! Pineapple is a natural pain reliever also! Thanks Chef John!!

  4. I think I might reserve half the pineapple. And then after it is blended chop it down the reserved pineapple to about 3/8ths inch pieces and then stir it in.

Maybe some of the onion as well
