    When making the queso, make sure you have the burner turned to the lowest setting or even move the pot to a cold burner before you add your cheeses. I kept the heat on too high and it ended up splitting the queso, making it gross.

  4. Josh is so out of touch with his audience it is sad. He's a hell of a cook and an entertainer to boot. But yes, most of us don't know how to just whip up guacamole. Quit being condescending to your audience and be realistic with your times… You planned this so clearly you'll be so much faster, we're just hearing it for the first time and are muuuch less skilled than you.

  5. FYI: The only reason you would wanna do guacamole in a molcajete (or mortar and pestle, which obviously works just as well) is so that you can grind up the onions, cilantro and chilies to release more flavor. If you do it that way it is totally worth it to use a mortar and pestle or molcajete for that. OBVIOUSLY just using a molcajete to mix the ingredients isn't gonna do anything.

    It is ridiculously funny to me how joshua thinks people don't need a recipe for guacamole and specifically wants people to use a molcajete for now reason, if he obviously has no idea what he is doing here. Authenticity is not everything.
